Ancho Chile Pork Loin Chops. These grilled chops will give your mouth a nice and spicy flavor burn. Your taste buds will be in flavor heaven!
Combine the rub ingredients in a small bowl.
Rub the spice mixture evenly over the pork chops and let them stand for 10 minutes.
Prepare your grill. We used our Primo Grill for this one—it’s a great grill. Set the temperature to 275°F. Throw in some wood chips for extra smoke flavor.
Place chops on a grill rack. Grill 15 to 20 minutes on each side. Cook to an internal temperature of 145 to 160°F
Remove from grill and let rest for 3 to 5 minutes

Ancho chili powder is made from ground, smoked, dried poblano peppers, and it gives this rub a subtle smoky heat. For a milder flavor, cut back on the ground black pepper or ancho chili powder, and omit the ground red pepper. You can also simply cut back on the amount you rub onto the meat at the beginning.
