Place seafood in a large bowl and season with salt and pepper.
In a large cast iron skillet, melt butter and sauté onion, peppers, and garlic until soft. Let the mixture cool, then add it to the seafood.
Lightly blend in the remaining ingredients, except for the shrimp. Mound 1-2 tablespoons of the stuffing mixture onto each shrimp.
Wrap each shrimp with half a strip of bacon and secure with a toothpick. Brush with more Country Bob's All Purpose Sauce.
Grill the shrimp for about 20 minutes, keeping an eye on them to avoid overcooking. Keep the Country Bob's All Purpose Sauce handy for dipping!
