These holiday meatballs are sweet, savory, and slightly spicy! They are cooked to perfection with our All Purpose Sauce and Barbecue sauce.
Ingredients
Meatball Ingredients:
2 slices of bacon (minced)
2 garlic cloves (minced)
1 eggs
1/2cup bread crumbs
1Tbsp Country Bob’s BBQ Sauce
Salt and pepper
1lbs ground pork
2tsp dried oregano
1 chipotle chiles (diced with adobo)
Sauce Ingredients:
2Tbsp olive oil
1/2 sweet onion (chopped)
3 cloves garlic – minced
2Tbsp Country Bob’s AP Sauce
3 chipotle chiles (diced with adobo)
1can crushed tomatoes (14 oz)
1/2cup broth (pork, beef, or chicken)
1Tbsp dried oregano

Preheat oven to 400.

Add all of the meatball ingredients to a bowl and mix very well. Form into about 12 golf ball sized balls and place on an oiled baking sheet.

Bake meatballs for 15-20 minutes until they begin to brown on top and have cooked all the way through.

While the meatballs bake, make the sauce. Add olive oil to a pan over medium heat and sauté the garlic and onion for 2-3 minutes. Add the chipotles, the can of crushed tomatoes, Country Bob’s AP sauce, the broth and oregano. Stir until well blended then reduce heat to medium low. Let the sauce simmer for 10 minutes without lid on.

Add the meatballs to the sauce and simmer together for 4-5 minutes.

Pour contents of pan into a dish and top with cilantro and cheese. Serve immediately!
