Baby back ribs in chili? Yes please! This rich chili is a mix of smoky and hints of sweetness. Pair it with cornbread or garlic bread!
Ingredients
1lbs pre-cooked baby back rib meat (removed from bones)
1 yellow onion (diced)
4 cloves garlic (minced)
2 jalapenos (diced)
1/4cup green onion (diced (the white parts)
1lbs ground pork
1can fire roasted diced tomatoes
1can black beans
8oz tomato sauce
1cup chicken stock
2Tbsp Country Bob’s AP Sauce
2tsp brown sugar
2tsp garlic powder
2tsp cumin
2tsp chili powder
2tsp paprika
2tsp onion powder
2tsp cayenne pepper (optional)
Salt and pepper
Olive oil
Instructions

Heat a large pot to medium heat. Add olive oil to the pot then add the onion, garlic, jalapenos and green onion. Cook until soft, about 6 minutes.

Add the brown sugar, garlic powder, cumin, chili powder, paprika, onion powder, cayenne, salt and pepper to the veggies and stir until well mixed.

Add the ground pork and stir in with the veggies. Brown pork and break up clumps for about 5-6 minutes.

Add the Country Bob’s AP Sauce along with chicken stock and stir. Once chili begins to bubble add the black beans, diced tomatoes and tomato sauce. Add the baby back rib meat to the pot and stir. Bring the pot to a boil then cover with a lid and reduce the temperature to low. Let the chili cook covered for about 2 hours and 45 minutes stirring every now and then. Uncover and cook for another 15 minutes uncovered and serve!
