Enjoy a hearty bowl of sweet and spicy chili with tangy pork chorizo and black beans.
Heat a large pot to medium heat. Add chorizo and cook until done, breaking up large pieces. Add the onion, garlic, jalapeños, and green onion. Cook until soft, about 6 minutes.
Add the garlic powder, cumin, chili powder, paprika, onion powder, cayenne, salt, and pepper to the pot. Stir until well mixed. In a food processor, puree two cans of beans with 1 cup of chicken stock. Add this to the pot with the other can of beans, the remaining cup of chicken stock, Country Bob’s AP Sauce, and diced tomatoes.
Stir and bring the pot to a boil. Cover with a lid and reduce the temperature to low. Let the chili cook covered for about 1 hour, stirring occasionally. Uncover and cook for another 15 minutes.
Top with cheese, sour cream, green onions or diced red onion and some more Country Bob’s AP Sauce and enjoy!
