Crispy grilled baguette slices are topped with a creamy blend of sautéed corn and melted Oaxaca cheese, layered with cherry tomatoes, crumbled feta, fresh cilantro, crunchy bacon seasoned with our Seasoning Salt. Grate Oaxaca cheese, slice cherry tomatoes, chop cilantro, and cook/crumble bacon.
Preheat a grill to medium heat. Spread mayo on each baguette slice and grill for about 5-6 minutes until toasted. Set aside.
Heat a small pot to medium heat and add butter. When butter melts, add the corn and sauté for 4-5 minutes. Add Country Bob’s Seasoning Salt and Oaxaca cheese and stir until cheese is melted. Turn heat off and set aside.
Build bruschetta by placing cherry slices on the bottom, followed by your cheesy corn. Top with feta cheese, cilantro and bacon and your bruschetta is ready to serve!
