Back-to-school nights just got a whole lot tastier! Looking for a quick dinner win, these BBQ Chicken & Chorizo Quesadillas are the A+ weeknight meal. Country Bob's Spicy Sweet BBQ sauce, smoky chorizo, juicy BBQ chicken, melty Oaxaca cheese, and a kick of spice all folded into one golden tortilla—easy to make, fun to eat, and guaranteed to score big with the whole family.
Slice chicken tenders into smaller pieces and season with Country Bob’s Seasoning Salt, paprika, garlic powder and chipotle seasoning.
Heat a pan to medium and add a little oil to coat it. Add the chicken and cook until cooked through, about 5-6 minutes. Remove chicken and toss in Country Bob’s Spicy Sweet BBQ Sauce, then set aside.
Place chorizo in the pan and cook until mostly cooked through. Add the red bell pepper, red onion and jalapeno until veggies are soft. Place chorizo/veggies with the chicken and stir to combine.
Using a medium hot griddle, squirt a little olive oil on the cooktop and place your tortilla over it. Add Oaxaca cheese to the middle of the tortilla along with your chorizo/chicken/veggie mixture and let cook for about 2-3 minutes, until cheese starts melting. Flip one side of the tortilla to make your quesadilla, and cook on each side for about 2-3 minutes until the tortilla is toasted and the cheese is melted.
Cut into triangles and serve with your favorite salsa!
