Tilapia Po’ Boys

Prep Time15 minsCook Time10 minsTotal Time25 mins

A Tilapia Po Boy recipe will, of course, use tilapia fish. But feel free to substitute your favorite kind of fish or even shrimp. Add some Country Bob’s for that N’Orlins to-do sandwich that you-do so well!  This is truly a ‘big easy’ sandwich.

Tilapia Po boy sandwich

3 (6 oz.) tilapia fillets, cut into strips or vubes
 0.50 cup flour
 1 tbsp seafood seasoning
 2 tbsp canola oil
 1 baguette, split and quartered
 1 cup shredded lettuce
13 Country Bob’s All Purpose Sauce
1 cucumber (thinly sliced) - may substitute pickle chips
 4 small Roma tomatoes, sliced
 1 small onion, sliced
 Cilantro leaves
 mayonnaise (optional)

Soak fish in bowl of Country Bob’s All Purpose Sauce.

In a shallow bowl, combine the flour and Country Bob's Seasoning Salt. Dredge the tilapia with flour mixture.

Heat oil in a large nonstick skillet over medium heat until 350 °F.

Cook tilapia; 3 to 4 minutes per side.

Split and quarter baguettes.

Once all fish is cooked, chop into large chunks and gently mix with mayonnaise and cilantro in a bowl.

Scoop fish mixture into bread halves and top with lettuce, cucumber, onion and tomato. Serve.

You can substitute any seafood on this dish. One of our favorites is oysters, but you can do shrimp, scallops, or even crab.
