A Tilapia Po' Boy recipe will, of course, use tilapia fish. Feel free to substitute your favorite kind of fish or even shrimp. Add some Country Bob’s for that N'Orlins to-do sandwich that you-do so well! This is truly a ‘big easy’ sandwich.
Soak fish in a bowl of Country Bob’s All Purpose Sauce.
In a shallow bowl, combine the flour and Country Bob's Seasoning Salt. Dredge the tilapia in the flour mixture.
Heat oil in a large nonstick skillet over medium heat until it reaches 350°F.
Cook tilapia for 3 to 4 minutes per side.
Split and quarter the baguettes.
Once all the fish is cooked, chop it into large chunks and gently mix with mayonnaise and cilantro in a bowl.
Scoop the fish mixture into the bread halves and top with lettuce, cucumber, onion, and tomato. Serve!
