Tilapia is a great tasting fish. Not only is it quick and simple, it also makes a very healthy meal. So why not top your favorite salad with some chunks of this golden brown goodness?

Ingredients

4 (6 ounce) tilapia fillets

0.25 cup Country Bob’s All Purpose Sauce

3 tbsp. olive oil

0.50 tsp. Country Bob’s Seasoning Salt

1 fresh lime, sliced

iceberg lettuce, chopped

1 tomato, diced

1 red or white onion, sliced

Alternative Option: Apple Almond Tilapia Salad Ingredients

4 arugula, thick stems removed (about 6 ounces)

2 heads endive, sliced

1 apple, cored and thinly sliced

2 tbsp. fresh lime juice

1 tbsp. Dijon mustard

2 tsp honey

0.25 cup sliced almonds, toasted

0.50 tsp salt and pepper mix

Heat 2 tablespoons of oil in a nonstick skillet over      medium-high heat.

Pour Country Bob's All Purpose Sauce into a bowl.      Dip/baste fish into sauce.

Place in batches into skillet. (2 at a time) Season      tilapia with seasoning salt as it cooks. Repeat after turning.

Cook until cooked through, 2 to 3 minutes per side. Add      more oil to skillet if necessary. Let cool.

Combine and toss lettuce, tomato and onion. Add with      fish pieces. Top with a slice or 2 of lime.

Add a bit of your favorite salad dressing if desired.      And remember, it’s always ok to pour some extra Country Bob's All Purpose      Sauce on top!

Apple Almond Tilapia Salad Directions:

  • In a bowl, whisk lime juice, mustard, honey, remaining      oil/Country Bob's All Purpose Sauce, salt and pepper.

  • Add the arugula, endive, apple and almonds.

  • Toss the salad and add it on top of the tilapia.
