Time to retire the standard hot dog condiments. These Elote (a.k.a. Mexican Street Corn) Dogs are so unique and delicious that your barbecue guests will be shocked that they're eating hot dogs.
In a small bowl, combine ½ tbsp of Country Bob’s Seasoning Salt, 1 tsp of ground red pepper or cayenne, mayo, AP Sauce, and lime juice. Mix until well combined.
Grill the corn on medium-high heat until grill marks appear. Once cooled, stand the corn in a bowl and use a sharp knife to cut the kernels off the cob. Toss the corn with the remaining half of the seasonings and set aside.
Grill the hot dogs to your preferred doneness, toasting the buns if desired. Assemble the hot dog, top with the seasoned corn mixture, sprinkle with crumbled cheese, drizzle with Country Bob’s spicy mayo, and finish with chopped cilantro. Enjoy!
