This delicious fajita stew will be calling your name this Cinco De Mayo! A zesty Mexican-style recipe packed full of flavor with our Seasoning Salt along with fresh veggies and steak cubes. Make it your own with avocado, tortilla strips and cheese.
Season steak cubes with Country Bob's Seasoning Salt, cumin, and garlic powder.
Heat a pot to medium-high heat and add one tbsp of olive oil. Add the steak cubes and brown on all sides, then remove from the pot.
Add the other two tbsp of olive oil and add garlic. Cook for 3 minutes, then add bell pepper, jalapeƱo, green onion, and red onion. Cook for 6 minutes while stirring.
Add flour to the veggies and stir until well coated. Cook for 5 minutes, then add beef stock and continue stirring. Bring stew to a boil, then cover and reduce heat to low.
Cook stew for an hour and 15 minutes on low, stirring occasionally, until steak is extremely tender.
Remove the lid, add sour cream and cilantro and stir. Serve stew topped with avocado, tortilla strips and cheese!
