
Barbecue Fried Chicken Sandwich with Barbecue Slaw

Marinate the Chicken Thighs
Combine buttermilk, 1 Tbsp Country Bob’s Seasoning Salt, hot sauce and pickle juice. Stir until combined then place chicken thighs in the buttermilk. Let thighs marinate for 30 minutes up to 24 hours.

Prepare the Red Onion
Slice red onion into thin strips and set aside.

Dredge the Chicken Thighs
Combine the other 2 Tbsp of Country Bob’s Seasoning Salt with flour. Remove the chicken thighs from the marinade and let excess marinade drip off. Dredge the thighs in the flour mixture and set aside.

Fry the Chicken and Onions
Heat oil in a skillet to 350°F. Add the onions and stir until they have browned. Remove and set on a paper towel. Carefully fry chicken for about 3-4 minutes per side. Remove and set aside.

Make the BBQ Slaw
Combine mayo, shredded cabbage and Country Bob’s Hickory Brown Sugar BBQ Sauce. Stir to combine and set aside.

Assemble the Sandwich
Build your sandwich by placing a dollop of BBQ slaw on the bottom bun. Top with pickles, fried chicken, and fried onions. Add a little more BBQ sauce on top and serve!
