Cut the potato into 1 inch cubes and boil for 10-12 minutes, until you can stab it with a fork. Once potatoes are soft, drain the water and place potatoes in a bowl. Add the butter, milk and half of the cheddar cheese. Mash with a potato masher until you get your desired consistency. Add more milk or cheese if you like it a little creamier. Season with salt and pepper, then cover the potatoes and set aside.

While the potato is boiling, shuck the corn, place it on an oven safe pan, and broil the corn on the second from the top rack for about 5 minutes. When the corn begins to char, take it out. Cut the corn from the cob onto a plate and set aside.

Heat about 1 cup of oil in a pot until it reaches 350 degrees. Place the flour, cornstarch, salt and pepper in a zip lock bag. Cut the chicken tenders into smaller pieces. About 3 per tender. Add them to the bag and toss with the flour. Grab the chicken from the outside of the bag to fully press it into the flour. Shake the excess flour from each piece and fry for 8-10 minutes until golden brown. Remove and set on a towel to get excess grease off. Add boneless wings to a bowl and toss in Country Bob’s Sweet Honey BBQ Sauce.

Serve by plating potatoes, topping with corn, boneless wings, the rest of the cheese and chives!
