Description

Soup season is in full swing- try this one of a kind fried buffalo chicken soup! With a bold kick of buffalo flavor, this dish is the perfect comfort food. Top it off with a piece of the chicken skin and serve.

Instructions

  1. Add the oil and butter to a pot over medium heat. Saute the onions, celery and carrots for about 8 minutes. Stir in the flour, oregano, basil, onion powder and red pepper flakes. Stir and add the chicken broth and Country Bob’s Hot Honey Buffalo Wing Sauce.

  2. Remove the skin from the chicken thighs and set aside in the fridge. Place the chicken in the pot. Increase the heat to high and bring the soup to a boil. Once it’s boiling, place a lid on the pot and reduce the heat to low. Let the soup cook for 25-30 minutes.

  3. While the chicken is cooking, heat about 1/2 cup of oil in a pan to 350 degrees. In a bag, add the flour, corn starch, salt and pepper. Add the chicken skin and toss in the flour mixture. Fry the chicken skin for about 3-4 minutes per side and set on a paper towel to drain.

  4. When Soup has cooked for 25-30 minutes, remove the chicken from the soup and shred chicken from the bone and set aside. Cut the cream cheese into cubes and add to the soup. You may need to smash some of the cream cheese bits with a spoon. Add the chicken back to the pot and stir. Season with salt and pepper and serve with a piece of the chicken skin in each bowl.
