
Pulled Pork Stuffed Peppers
Description
Peter Piper picked a peck of pulled pork peppers! Meaty cheesy goodness all stuffed in a crunchy pepper!

PREHEAT
Preheat oven to 375°

PREPARE PEPPERS
Cut tops off peppers and remove seeds.

COOK
Cook rice per instructions on box.
After rice is done mix in all pulled pork, mozzarella cheese and 1 cup of BBQ sauce and stir together.

BAKE
Fill peppers with rice mixture and place in a baking dish. Bake at 375° for 40 minutes.

TOPPINGS
Top with sliced provolone and cook until provolone cheese is melted. Garnish with chopped red onion, cilantro and sliced jalapeños.
Drizzle top with more BBQ sauce and squeezed lime juice.
