This spatchcock-style chicken is seasoned with a zesty mix of our Seasoning Salt, cumin, paprika, chili powder, and chipotle, then smothered in a rich, buttery coating for maximum flavor. Slow-cooked in the oven for tender, mouthwatering results, this easy-to-make dish is perfect for a family meal or your Christmas dinner.

Instructions

  1. Prepare the Seasoning Butter

    Preheat the oven to 300°F. Combine Country Bob’s Seasoning Salt with cumin, paprika, chili powder, and chipotle powder. Add to butter and mash with a fork to combine. Set aside.

  2. Prepare the Chicken

    Using sharp scissors, carefully cut out the backbone of the chicken and dispose. Rinse chicken out to remove any pieces of bone and flesh. Pat chicken dry with a paper towel then use your softened southwest butter and smear it under the skin of the chicken. Make sure to smear it on the breast, legs, and thighs. Smear any excess butter on the skin of the chicken.

  3. Cook the Chicken

    Cook in the oven for 2 hours basting with the juices halfway through. Remove and let the chicken rest for 5 minutes before carving. Serve immediately!
