
Country Bob’s Birria Ramen

Prepare the Chili Sauce
Bring a cup of water to a boil. Remove the stems and seeds from the chiles, then place them in the boiling water. Turn off the heat, cover the pot, and let sit for about 5 minutes until the chiles are pliable. In a blender, combine the softened chiles, garlic, oregano, thyme, cinnamon, bay leaves, and 3 cups of broth. Blend until smooth, then strain the sauce and set it aside.

Cook the Beef
Heat a large Dutch oven over medium-high heat. Season the chuck roast with Country Bob’s Seasoning Salt and sear it on all sides in the olive oil-coated Dutch oven. Pour the blended chili sauce into the pot, cover, and reduce the heat to medium-low. Let the meat simmer for 2-3 hours until the beef becomes tender and falls apart.

Assemble the Ramen
Remove the beef from the pot and shred it. Place ramen noodles in individual bowls and evenly distribute the juice from the Dutch oven over them. Cover each bowl with a plate for about 5 minutes to allow the ramen to soften. Garnish with lime wedges, diced onion, cilantro, jalapeño, radish, or soft eggs. Enjoy!
