Prepare the Seasoning and Egg Mixture
In a bowl, crack the eggs with the buttermilk and mix. Add a few dashes of hot sauce and set aside. In a small bowl, mix the cayenne pepper, ground pepper, garlic powder, Country Bob’s Seasoning Salt, and paprika. Divide this seasoning mixture in half, then add the brown sugar to one of the halves.

Coat the Catfish Nuggets
Pour the seasoning mixture without brown sugar into the cornmeal and mix thoroughly. Dip the catfish in the buttermilk/egg mixture and let any excess fall off.

Bread the Nuggets
Move the catfish to the cornmeal mixture and fully coat each buttermilk-dredged nugget in cornmeal. Set the finished nuggets aside on parchment paper. Repeat until all nuggets are breaded.

Fry the Nuggets
Pour oil into a Dutch oven or large pot and heat to medium, around 350°F. Carefully fry the nuggets until golden brown, about 2-4 minutes. Work in batches to avoid overcrowding the pot.

Finish and Serve
Once the nuggets are done, take about 3 tablespoons of the frying oil and mix it with the other half of the seasoning. Pour this over your nuggets and serve!
