Start your pellet grill on Smoke with the lid open until the fire is established. Set the temperature to 225° F.

Trim any excess fat off of the tri-tip and add Country Bob's Seasoning Salt

Place the tri-tip on the grill grate and cook until it reaches an internal temperature of 130° F. This should take 1 to 1-1/2 hours. We recommend using a digital thermometer for best results.

When tri-tip reaches 130° F, pull off the heat and wrap in foil. Set aside, turn the grill up to 500° or use a cast iron skillet on high heat.

When the grill/pan comes to temperature, remove tri-tip from foil and sear for 4 minutes on each side.

Remove from heat and allow to rest for 10-15 mins. Slice against the grain and enjoy!.

Oven-roasted tri-tip

Heat oven to 350 degrees. Add 2 tablespoons of olive oil or other cooking oil to a large, heavy ovenproof pan. On the stovetop, heat on high until pan is very hot, then add tri-tip, fat side down. Turn heat to medium-high and sear roast for about 4 minutes. Turn the roast and put it in the oven. Cook it for about 10 minutes a pound, checking with an instant-read thermometer until it reaches 130 degrees for medium-rare.
