Ingredients:
1 Russet potato cut into thin slices
2 tbsp Country Bob’s Seasoning Salt
2 strips of bacon crumbled
1/4 cup mozzarella cheese
2 tbsp butter
2 tbsp flour
1/2 cup whole milk
Chives to garnish
2 tbsp olive oil

Using a mandolin or sharp knife, slice your potatoes very thin. Wash potatoes in a bowl with cold water to remove the starch. Continue washing until the water runs clear. Remove and dry potatoes with a paper towel.

Coat potatoes in olive oil and Country Bob’s Seasoning Salt. You may roast these in the oven at 400 degrees for 20-25 minutes or air fry them for 15. While potatoes are cooking, work on the cheese sauce.

Melt butter in a pot and add flour. Stir to make a roux and cook for about 8 to 10 minutes. Reduce heat and add the milk and mozzarella cheese. Stir until you’ve obtained a cheesy mixture.

Place a dollop of cheese on a plate then place your potatoes on the cheese. Top with more cheese, bacon and chives to garnish and it’s ready to serve!
