Prepare Chicken and Veggies
Preheat oven to 425°F. Season chicken with paprika, onion powder, garlic powder, and Country Bob’s All Purpose Sauce. Heat a skillet to medium and cook the chicken until browned on each side. Remove the chicken and cook the onions and garlic over medium heat until softened. Add the chopped celery, carrots, and frozen peas. Stir in the flour, salt, and pepper.

Make the Sauce
Add the chicken back to the pan. Slowly whisk in the broth, then the milk, and whisk for about 5 minutes until the mixture thickens. Remove from the heat and set aside.

Assemble the Dish
In a large pan, layer enough slices of potato at the bottom to cover the pan. Spoon the chicken mixture on top of the potato slices, then cover the mixture with more potato slices. Season the top layer of potatoes with salt and pepper, then drizzle olive oil over each.
